TANGY APPLE DHAL ❄

This dhal is an excellent source of protein – necessary for growth and repair of blood vessels, muscles and internal organs. Lentils and apples are also a source of dietary fibre, necessary for healthy little bowels.

MAKES 16 ICE-CUBES

TOTAL PREP & COOKING TIME: 30–35 MINS

1 tbsp olive oil

1 small onion – peeled, finely chopped

¼ tsp minced ginger

¼ tsp minced garlic

¼ tsp ground cinnamon

125g red lentils – soaked in water (10 mins), washed, drained

1 small sweet potato – washed, peeled, cubed

550ml water

1 sweet apple – peeled, cored, cut into small chunks

Heat the oil in a saucepan on low heat, add the onion and sauté for 3–4 minutes, until soft and golden. Add the ginger, garlic and cinnamon and cook for a further 30 seconds.

Add the lentils to the pan along with the sweet potato, cover with the water and stir. Bring to the boil and simmer (uncovered) on medium heat for 20 minutes, until both the lentils and potato are tender.

While the lentils and potato are cooking, steam the apple chunks for 1½–2 minutes until tender then set aside. Add them to the curry once it’s cooked, then stir and mash the whole curry to a consistency your little one will be comfortable eating. This is delicious served on its own or with rice or roti for toddlers.
